An amazing meal at MAZ - the new restaurant in Tokyo by Virgilio Martinez of Central in Peru which was just crowned the #1 restaurant by Word's 50 Best! Helmed by Santiago Fernandez, the tasting menu is an exploration of Peru’s biodiversity through 9 different altitudes. What sets MAZ apart from Central is that only 20% of ingredients are from Peru while the rest is sourced in Japan - the result is something truly unique. Bold, exciting and colorful with exotic ingredients, the meal was both a feast for the eyes and the mouths!

I was pleasantly surprised have seasonal mountain vegetables 山菜 in one of the courses - a testament to the chef’s embrace of Japanese ingredients. The other delight was the alcohol pairing which consisted mostly of South American wines and cocktails. Finally the last dessert course with the many textures and flavors of cacao was simply incredible. Thank you Chef Santiago for this delightful journey into Peruvian biodiversity and cuisine!
