A superb meal in Bangkok at Terroir which serves “progressive kaiseki” cuisine! The idea of eating kaiseki may not be top of mind when visiting Bangkok, but the exceptional dishes here should put this restaurant on your radar. Chef Hao is not trying to serve authentic kaiseki cuisine but rather, his own innovative interpretation of the art form. Showcasing both Japanese and locally sourced ingredients, the dishes are diverse - ranging from a simple tomato to abalones cooked in a pig’s bladder. There were many highlights during the meal which delivered impressive balance and flavors such as the signature Ebi Hotate Salad, Pumpkin Chawanmushi, Goby Kare, Tomato, and Anago Gohan. The carefully curated wine and sake pairing by sommelier was excellent as well. The dining experience was cordial and fun with everyone sitting around a 12-seat counter - we made friends with our neighbors who were regulars here and generously shared their off-menu order of a whole roast suckling pig served 2 ways. The restaurant will be closing in August 2025 as the chef will be embarking on a 2-year culinary journey across Europe and Japan - I look forward to seeing what he will do in the future!
