One of the new restaurants I was most excited to try in HK was NOI - the contemporary Italian restaurant at Four Seasons Hotel by Paulo Airaudo of 2* Restaurant Amelia in San Sebastián! Sourcing the best ingredients from all over the world including Japan, the meal starts in the lounge where you can enjoy floor to ceiling views of Central with your aperitif and amuse bouche. The mains are enjoyed in the dining room which is best experienced at the counter overlooking the kitchen. The meal then ends back up in the lounge for digestives and petit fours. Throughout the restaurant, you will find playful characteristics from decorations to music that are a reflection of the chef’s personality.

Named after Paulo’s daughter, Restaurant Amelia in San Sebastián was awarded its first Michelin Star 7 months after opening in 2017 and its second star last year. As he is serving many of his signatures from Amelia at Noi, this is the closest you can experience his flagship restaurant without traveling to San Sebastián!

I had first tried Paulo's cooking at Amelia in San Sebastián 4 years ago, and I was impressed with his creative and well-balanced dishes then. After my meal at NOI, I find that his flavors have become even more elevated and more refined. Coupled with the high quality ingredients served here, NOI is definitely worth checking out and a great new addition to the dining scene in HK!
