[Tokyo] Birthday Celebration at 3* L'Effervescence

A wonderful birthday celebration last week at 3* L'Effervescence where I also celebrated my birthday 7 years ago in 2016! We loved our experience here - the restaurant is like an oasis in the middle of the bustling city. It was our first time back after L'Effervescence was awarded 3 Michelin stars in 2021. Sustainability continues to be a theme here from ingredients sourcing to cooking methods. One of the most impressive dish was the artisanal salad with 60 vegetables each prepared differently - some as is, some pickled or grilled. To show their respect for the producers, we were given a card with a list of the artisan farmers and their respective products. The other highlight was the risotto with the creamy fugu shirako and housemade caviar - I wasn’t sure about the warm caviar at first but it acted wonderfully as a salt agent.
