Follow me to 3* Plenitude - the hardest reservation in Paris at the moment! Guests are advised to book at least 8 months or more in advance. The chef is Arnaud Donckele who also runs the 3* La Vague d’Or in Saint-Tropez. Located inside the luxurious Cheval Blanc Paris, Plénitude was awarded the coveted three stars just seven months after it opened.

Sauce is the heart and soul of French cuisine, and it is the sauces that take center stage at Plénitude. From bouillons to consommés, sabayons to vinaigrettes, the liquid gold are so exquisite that the ingredients of the dish are accompanying the sauces rather than the other way around. Right from the first sauce - the green ‘Eden’ velours with grilled sardine - I was in love. Each of the sauces were made up of a myriad of ingredients, and they were complex yet balanced. With each dish, we were instructed to taste the sauce first before trying it with the other ingredients. Extra sauce was always provided on the side so we can savor it by itself or with bread if we’d like. For desserts, diners are in the good hands of acclaimed pastry chef Maxime Frederic with the most gorgeous sweet endings including a strawberry pie and chocolate rose.

The dining experience is not complete at Plénitude without its exceptional service. While fine dining in Paris can sometimes be stiff and serious, the service here is warm and relaxed with the utmost attention to detail - no wonder it won the Art of Hospitality Award from World's 50 Best Restaurants 2024!
