A delightful dinner at 2* Racine in Champagne! The chef is Kazuyuki Tanaka who expresses the root of his Japanese heritage and the root of his cuisine through local ingredients at his restaurant. The food is creative and the precision in his technique impressive. The lobster was one of the best I’ve ever had - the delicate texture rivaling the one at Table by Bruno Verjus in Paris. Other highlights included the eel, arctic char, monkfish and the signature langoustine - all of which were cooked to perfection. The desserts continued to impress with its unexpected combinations. This is a restaurant not to be missed in Reims.
