In Shanghai for a special event and our first meal was at Amazing Chinese Cuisine 菁禧荟 which serves elevated Chiu Chow cuisine using premium ingredients! The founder Mr. Du 杜建青 not only revamped classic dishes but also created new ones using his deep understanding of the cuisine. I first visited his restaurants 2 years ago and really enjoyed the food, so I was excited to be back again. There were many highlights of the night such as the Chiu Chow style braised fish maw served with a delicious sauce that we had to finish up with rice, the geoduck & clam soup, and the poached sea whelk with chicken oil. It was also a delight to see comfort dishes like sacha beef, Puning tofu, and fried rice executed in such a refined way. What a wonderful first night in Shanghai!
