An impressive meal at Hatou 波濤 in Tokyo! The young chef Daichi Kumakiri has worked at renowned establishments including Ishikawa, Kohaku and Amamoto before opening his own sushi restaurant in 2020. His background in kaiseki shines in the otsumami portion with stellar appetizers such as shirako, matsubagani, fried karasumi and hamaguri soup. The nigiri was equally delicious and the consistency is incredible. We ended the meal with a sweet potato dessert with milk ice cream - probably the best dessert I’ve had at a sushi restaurant!
