A wild adventure exploring the flavors of Fujian and Sichuan at Aventure! Hailing from Sichuan and now living in Xiamen, Chef Esther Hou sets out to present the cuisine of her hometowns in a surprising and avant-garde way. The chef’s training at Geranium and Alchemist in Copenhagen was evident throughout the menu with precise flavors and eye catching presentations. It was helpful that we had just tried many of the iconic dishes in Xiamen such as shacha noodles and oyster omelette earlier in the day, so we were able to appreciate the elevated version of them at the restaurant. My favorite was the mapo tofu served as a dessert - definitely an ingenious surprise! The “tofu” was created with Sichuan Dahongpao pepper, miso and soy milk, which was then topped with dried Spanish Serrano ham and served with a clarified Pixian douban sauce. The ingenious combination of sweet, savory and spicy flavors came together beautifully. Complementing the food was the tea pairing by tea sommelier Rita Ye who showcases the versatility of tea in numerous forms from nitro brew to infusion with peanuts. With its bold flavors and innovative ideas, Aventure is definitely one to watch in Xiamen.
