[Hong Kong] The Sky Boss 波士廳 - Dining in the Sky

I'm back in Hong Kong and the first order of business is dining in the sky at The Sky Boss 波士廳 - the sister restaurant of the Michelin-starred The Boss in Central! Located on the 101/F of the ICC with Tenku Ryugin as its neighbor, you'll be guaranteed a breathtaking view of the city and quality traditional Chinese cuisine using only the best ingredients. The interior is meticulously designed as well with a bird-cage bar area and a modern main dining room offerings panoramic views of Kowloon. 



We started off with an appetizing snack of cherry tomatoes which had been marinated with Chinese Hua Diao wine. I loved the sweet and sour taste which reminded me of dried preserved plums.

The next dish is a classic Cantonese snack of Deep-fried Shrimp on Toast which had been fried perfectly and not too oily. 

The Double-boiled Winter Melon Soup with assorted meat arrived in grandeur as the melon had been wrapped with a large piece of lily pad skirt. Winter melon soup is a classic and popular soup, and the soup here was light and soothing to drink.





The Deep-fried Crab Claw with Shrimp Paste was another delight with a flavorful shrimp paste enveloping the crab claw meat. 



The next dish is an award-winning dish which won the 2016 Best of the Best Culinary Award - Steamed Egg White with crab, lobster, broccoli, seafood bouillon & egg sauce and deep-fried salted egg pastry stuffed with pigeon egg. There's a lot going on in this dish and you almost have to appreciate each creation separately.



The Deep-fried Chicken with Homemade Shrimp Sauce is a crowd-favorite with its rich and palpable flavors. It was a nice touch to provide cucumber sticks on the side to balance the intense flavors of the chicken. 

After having quite a few deep-fried dishes, the Braised Crab Meat & Golden Mushrooms Wrapped in Tomato was a welcomed and refreshing change.



The Stuffed Chicken Wings with Sticky Rice was probably my favorite dish of the evening as the chicken wing was perfectly crispy and stuffed with a lot of fragrant glutinous rice!

Lastly, we had two desserts to end the evening with - Deep-fried Sweet Potato Sesame Balls with Egg Yolk and Steamed Charcoal Buns with Egg Yolk
