[Copenhagen] OAD's 9* Masters Dinner - Geranium x Maaemo x Azurmendi
I was in Copenhagen last week to attend Opinionated About Dining's Top 100+ Weekend to celebrate the announcement of the 2016 OAD Top 100+ European Restaurant! A series of events were created for the celebration starting with a Masters Dinner at Geranium featuring an exciting collaboration between three 3 Michelin star chefs:
- Rasmus Kofoed of Geranium in Copenhagen, Denmark
- Esben Holmboe Bang of Maaemo in Oslo, Norway
- Eneko Atxa of Azurmendi in Larrabetzu, Spain
Started by famed food blogger Steve Plotnicki, Opinionated About Dining is a dining survey that relies on the experience and opinions from diners who are passionate about where they eat. I was invited to participate in the survey last year and when I found out about the events in Copenhagen earlier this year, I knew it was something that I couldn't miss. The OAD weekend turned out to be amazing with delicious food from world class chefs while being able to meet with other foodies that shares the same passion as I do from around the world!
We made our way to Geranium on day 1 of the events and were treated to an unforgettable and impeccable meal by the three chefs. Most of the dishes were contributed by Geranium while Maaemo and Azurmendi offered 3 dishes each. With three different chefs, the entire menu was seamless and cohesive while every single dish was flawless - I think this was one of the best meals I've ever had yet!
Once we walked into the restaurant, we were ushered into the experimental kitchen where we were treated to a lovely glass of 2007 Blanc de Blancs from Nyetimber - a lovely sparkling wine from Sussex in England made using champagne method.
When it was time, we were led to the main dining where 27 courses from the masters await us.

"Razor Clam" with sour cream and minerals

[Azurmendi] Egg from our Hens, cooked inside out and injected with truffle sauce
Sea Buckthorn juice pairing to go with the next set of dishes
"Dillstone" Mackerel with horseradish and frozen juice from pickled dill
[Maaemo] Fermented Trout with scallop garum
Haddock with parsley stems and Finnish Kaviar in buttermilk
[Maaemo] Green Asparagus with summer flowers
Crispy Grains, bread with old grains and gluten free bread with seeds
Gooseberry with roasted sunflower seeds and tarragon
[Azurmendi] Fried Hake with roasted red pepper infusion and parsley
Black Currant, Ligonberry & Juniper
[Azurmendi] Pigeon with green beans and deuxelle
The dish was also served with liver toast and pigeon sherry juice which concluded our savory dishes of the meal.

We were given a choice of tea or coffee and when I picked tea, I didn't realize my tea leafs would be trimmed on the spot!
